How can I apply different sets of page number schemes to a specific document?

To add different page numbering schemes to separate sections of your PDF:

Go to PDFpen => Edit => Headers, Footers, Page Numbers => Insert

A menu will pop up that allows you to choose the position, alignment, format, and starting page. 

Example:

If you want to number your Prologue up to Chapter 1 in roman numerals i-v, but the Prologue begins on the third page of the document itself, follow these steps under Page Numbering:

1. Specify Alignment: select from options listed: Left, Center, Right, Inside, Outside...
2. Specify Format: select from i, ii, iii
3. Starting Page: select the starting page number you want to begin with. For example, if you want to start the numbering from the beginning e.g. i,ii,iii or a,b,c or 1,2,3, select "1." 
4. Check the option to "Include number on first page" only if you want a page number included on the first page of the range of pages.

Expand the Advanced Options menu and select:
1. Template: & [Page]

2. Insert from page: 3 To page: 7 (specify a range of pages where 1 equals the first page in the document)
